Malabon, 1968
    I was about 2 years old, barely walking on my own and just learning how to talk when I had my first encounter of this scrumptious food.
   It was odd at first, my facial expression would literally shift from one side to another, that's how my mom described everything to me, a little confusing if I am really liking it or not, was it salty? or was it sour? I decided to spit the food out of my little mouth.

    Hate not my dear readers! for that happened only once! my mother, the Great Emma, Born and raised in Malabon does not give up too easily. She gave me another spoon and this time, with a little bit of everything, eggs, shrimp, oyster and the fat noodle, and it is all suddenly perfect!
 
 So to those who are not familiar with this food, let me indulge you with a quick and sweet Introduction.


 
   Pancit Malabon, as the name speaks for itself, originated from Malabon. I also learned that it used to be called as "Pancit Bame" and later called "Pancit Malabon" since it is the only place back then where you can find it. It is also one of the many variations of Pancit or Pansit, a famous stir-fried noodle dish here in the Philippines.
   Its main ingredient is fat rice noodles that are soaked in water then briefly blanched in boiling water. Its yellow-orange color is probably due to the sauce that is a mixture of atchuete oil and patis (fish sauce).
   This is definitely one overload pancit because of its generous toppings which includes.. oysters, shrimp, adobong pusit (squid in soy sauce), tinapa flakes, chicharon, boiled eggs, and vegetables like, pechay baguio, kintsay and spring onions.
   These days, you don't have to go to Malabon to have a taste of this famous pancit, there's a variety of stores that can be found in almost every block in the neighborhood, or, you can try making one for yourself. 
 
   Just like how first love never dies? it really doesn't! for up to this day, I am still mad crazy about Pancit Malabon!
